Barley grass refers to the young soft green shoots which crop up on the barley plant. It is amongst the earliest grown sweetgrass in the world and traces its history even before 5000 BC.
The barley grass, or also called Hordeum vulgare, belongs to the cereal species of the sweet grasses. Long before the barley forms its spikes and the grain can be harvested, the barley grass sprouts from the ground about ten to twelve days after sowing.
The nutrient concentration of these plants is very balanced. Calcium, iron, vitamin B1, vitamin C and zinc are present to a high degree.
